Bratwurst Pizza

This recipe makes approximately one 14" pizza

Combine all ingredients in a double boiler (double boiler is used to prevent scorching of the sauce) and simmer gently until garlic is cooked.

Can be cooked in a small sauce pan, but need to be careful not to scorch the bottom.

Crust

Make KimRidge Wholesome Bread dough. And let it rise once or twice.

Grease baking sheet with lard or shortening. Sprinkle with cornmeal.

Roll or press the bread dough to the desired shape of about 1/8" thickness on a lightly greased baking sheet.

Let the crust rise for about 20 minutes in an oven preheated to about 100 degrees.

Evenly spread the sauce with a flexible spatula.

Evenly distribute all ingredients separately in the following order:

Cheeses: Shredded Mozzarella followed by shredded Gouda cheese.

Then Gouda, sharp Cheddar, or other sharp cheeses.

Pizza Sauce

8 ounces tomato paste

1/4 cup vinegar

1/4 cup water

3 large garlic cloves chopped

1/2 tsp sugar

1 tsp salt

1 tsp oregano

1/2 tsp basil

Toppings

4 ounces shredded Mozzarella cheese

3 ounces shredded Gouda cheese (or Tilsit)

4 slivered large cloves of garlic

1 medium onion diced to 1/4" pieces

1/2 of a medium Chile pepper diced

1 bratwurst sausage sliced to 1/16" in thickness

Bacon or ham sliced to 2/3" squares

Dough

Take about 1/3 of the batch of KimRidge Wholesome Bread dough for pizza crust.
